bright bodies mango salsa

Nothing says Summer like mangos and as the prices drop they make a wonderful salsa to freshen up fish, seafood or chicken. Get flavour in your fresh food with herbs and spices that way you won’t need to use excess oils or fats.


3 ripe mangos – diced

1 red capsicum – diced

1/2 red onion – finely chopped

1 cup coriander – chopped

1 red chilli – seeded and finely chopped

1 lime – juiced

salt/pepper to taste

Combine all ingredients in bowl

swap mango for pineapple

swap capsicum for cucumber

add diced apple and strawberries for a fruitier flavour
