Burrito Bowl

Is Tuesday night Taco night in your house too? Why not change it up to…. Burrito Bowl night. It doesn’t rhyme but it tastes amazing! Fresh, colourful and so easy for a mid week meal.

Serves 4

Ingredients:

  • 500g lean beef or turkey mince
  • 2 teaspoons cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground chilli
  • 1/2 teaspoon garlic flakes
  • 1/2 iceberg lettuce – sliced
  • 1/2 red cabbage – thinly sliced
  • 2 cucumber – diced
  • 1 capsicum – diced
  • 2 carrots – grated
  • jalapeno chilli to serve

Salsa ingredients:

  • 1 punnet cherry tomatoes – cut in 1/2
  • 1/2 red onion – finely chopped
  • 1/4 cup coriander – chopped
  • 1/4 cup parsley – chopped
  • 1/2 chilli – finely chopped
  • 1 clove garlic – minced
  • 1 lime – juiced and grated rind
  • salt and pepper

 

Method:

  • Brown mince, add spices and 1/2 cup water to thicken
  • arrange all other ingredients in bowl and top with mince, jalapeno and salsa
  • Note: you can use a pre mixed burrito seasoning (no MSG) from a deli to save time
