Top 5 Breakfasts For Weight Loss

With the weather cooling and the winter PJs coming out of storage I thought I would share with you my top breakfasts for weight loss, sustained energy and maintaining lean muscle mass.

  1. Scrambled Eggs with grated greens
  • 1 whole egg
  • 1/2 cup egg white – whisked
  • 1 cup grated zuchinni
  • 1 cup baby spinach
  • 1/2 cup capsicum
  • salt and pepper to taste
  • combine all ingredients in non stick pan and cook til scrambled, serve with 1 slice toast and 1 tablespoon avocado

2. Smoked salmon on toast

  • 1 slice toast
  • 1 tablespoon cottage cheese
  • 1/2 sliced tomato
  • 1/2 cup rocket
  • 50g smoked salmon

3. Steel cut oats

  • 1/2 cup steel cut oats
  • 1/2 cup water
  • 1/2 cup milk of choice
  • 1/2 cup berries – fresh or frozen
  • 1 1 tablespoon chia seeds
  • cinnamon or nutmeg

Soak oats, water and milk over night

cook 10 min on stove

add berries, chia and cinnamon

4. Shakshuka (baked) eggs

  • 1 T olive oil
  • 1/2 red onions sliced
  • 1 capsicum sliced
  • 1/2 chilli sliced
  • 400g tin tomatoes
  • 1/2 cup parsley chopped
  • 1 teaspoon cumin
  • 1teaspoon paprika
  • 2 eggs

Combine oil, onion, capsicum, chilli in frying pan and cook til soft

Add tinned tomatoes, parsley, cumin and paprika

simmer 3 min

make well in mixture and crack eggs into mixture

cook 5 min on simmer

divide mixture into 2 bowls and serve with extra parsley

5. Homemade baked beans

  • 1/2 brown onion chopped
  • 1 teaspoon olive oil
  • 400g tin diced tomatoes
  • 1 400g tin borlotti or cannellinibeans
  • 1 teaspoon dijon mustard
  • 1 cup baby spinach
  • salt and pepper

saute onion in olive oil til soft

add tomatoes, beans, mustard, salt and pepper a,d spinach

cook til soft 5 min
