Tuna Poke Bowl

Tuna poke bowls are my all time favourite mid week dinner or leftover lunch. It makes a tasty, quick meal on a hot summers evening.

Serves 4

Ingredients:

  • 500g sashimi grade tuna – diced 1cm
  • 1 spring onion – chopped
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons rice wine vinegar
  • 4 teaspoons sesame seeds
  • 1/2 red cabbage – thinly chopped
  • 1 cucumber – diced
  • 1 capsicum – diced
  • 2 carrots grated
  • 2 zucchini – spiralised
  • 1/2 cup edemame beans
  • 4 tablespoons pickled ginger
  • 4 tablespoons seaweed salad
  • 2 nori sheets

Method:

  • Combine tuna, onion, soy, sesame, vinegar and sesame seeds in bowl. mix to combine and place in fridge 2-3 hours
  • place all other ingredients in bowl and top with tuna mix
